Had similar problems on a Ducati when the oil pressure light came on. After calling it in was informed as long as there's oil in it, it's ok to ride. I was told there has never been an oil pump failure! Turned out to be the pressure sensor was at fault.
In my previous car (Mercedes) was told there's no pressure sensor but a level sensor instead. (For similar reasons to the above.)

I'm sure the ECU would throw a DTC if the oil pressure was low and the engine had fired up, but it's nigh impossible without the workshop computer to emulate this.
You can certainly monitor the oil pressure in the V8 engines though, and I think with the oil filter adaptor you should be able to on the V6 lump.
I haven't had time to look around my engine yet to look for another suitable pick up point near the oil filter, but to answer the OP question, if it were a workshop scenario then you would use the below adaptor. I will get round to it at some stage...
